Head Chef Edinburgh Old Town Up to £35,000 DOE + £6,000-£8,000 TRONC + 10% Bonus 48 hours | 5 days | Predominantly daytime A 35-cover restaurant that can quickly become a 75-cover restaurant when the sun comes out is a unique challenge. It requires a particular kind of chef: adaptable, organised and always ready to step up a gear when necessary. This is a busy breakfast, brunch and lunch operation, serving around 120-150 covers at breakfast and another 200-300 across the rest of the day .
